Lettuce and Kale are Falling Over but Looking Good

I have a Hydo/Aquaponics Lab going on in my office to try and figure out why things work the way they do and what works best. Now, I have never grown lettuce or kale in a garden so I am not familiar with the way it grows. I have a time lapse camera taking pictures of the kale. As I watched them, I noticed that they were growing great and up, then fell over and proceeded to grow up. Same with the lettuce. I have pictures too. I have never done any hydroponics or aquaponics before and so before I got started I read up on it quite a bit. I read by one person that I did not need to shut the lights off for "bed time" yet others say to put the lights on a timer. I also have an Areogarden and it has a timer on it.
So Should I be concerned that they are falling over. They look healthy and are growing great?
Do I need timers on the lights?
